原料 苦瓜200克,绿豆芽100克,红辣椒丝、酸豆角、熟芝麻各适量。
调料 蒜蓉15克,精盐2大匙,酱油1大匙,米醋、果汁各2小匙,植物油适量。
准备工作
1 将绿豆芽去根和豆皮,用清水漂洗干净,捞出,沥净水分。
2 锅置火上,加入清水和少许精盐烧沸,放入豆芽焯烫片刻,捞出过凉,沥净水分。
3 酸豆角洗净,攥去水分,切成细蓉;苦瓜洗净,顺长剖开,去籽,切成薄片。
制作步骤
1 将苦瓜片放入淡盐水中拌匀,浸泡至软,捞出,再换清水洗净,沥干水分。
2 将苦瓜片放入容器中,加入绿豆芽调拌均匀,码放入盘中。
3 锅置火上,加入植物油烧至六成热,先下入红辣椒丝、酸豆角蓉、蒜蓉炒出香味。
4 再加入酱油、米醋、果汁调拌均匀,转小火煸炒几分钟,出锅浇在苦瓜和豆芽上拌匀,撒上熟芝麻即可。
