客家茄子煲,炸茄子是关键,油量、油温、油炸程度一定要恰到好处,尤其不能吝惜油。初入锅,油温不宜太高,五成热即可,炸至金黄色捞出,恰有外焦里嫩之神韵。成菜的茄子饱吸肉香,挂着点点芡汁,软软的、滑滑的,用于拌饭最适合不过了。
